The high sweetness in this coffee is the product of the red honey processing method. The cherries are harvested at the optimal brix sugar content. Then the cherry fruit is pulped without washing the mucilage and the coffee is dried with the mucilage stuck to the seed.
This is a true specialty coffee where the processing is used to determine the end product and flavour. The coffee has a rich full body and a lower acidity. We found that the coffee is complimented with an espresso roast that is slightly longer and developed to highlight the body and sweetness.
